Due Cigni® The ARNE line designed by Danish knife maker and designer Jens Anso shows distinctly danish design combined with Italian tradition, with sweeping lines and curved handles designed to reduce fatigue in heavy use situations. As is customary for Ansø designs, the top priority is placed on perfect functionality. The design concept for the various blade shapes instantly impress demanding cooking enthusiasts.

Arne, an ancient nordic name describing the center of the home, namely the kitchen fireplace. A place to gather the family and friends for warmth, good food and joy. Incidently Arne is also an old nordic boys name meaning “eagle”. 

Each blade is constructed of one-piece of 12C27 stainless steel from Sandvik/Sweden. It has been proven in millions of applications and is significantly superior to conventional chef's knife steels in terms of hardness and edge-holding characteristics. The handle scales of the full-tang design are fabricated from either attractive ziricote wood or practical HPL (High Pressure Laminate) and feel exceedingly good to the touch, while also providing an appealing, warm contrast to the cool, Nordic blade design.

Zircote Wood is not suitable for dishwashers, HPL (High Pressure Laminate) is dishwasher safe.

The initial reason for trying this Due Cigni knife was boring practical. I look after a holiday cottage which we've equipped with a good set of kitchen knives, but they suffer greatly from guests putting them in the dishwasher. The stainless steel blades rust and the handles crack after a year or so. Of course *all* manufacturers recommend you wash their knives by hand, even if they're supposedly dishwasher proof, but in a holiday cottage that's not going to happen. The HPL handled version of this Due Cigni range is said to be dishwasher safe, and the utility knife is the cheapest option in the range, so thought I'd give it a try.

However, having used this knife myself at home I'm not going to let anyone else get their hands on it. It's a revelation to have a razor sharp kitchen knife made of a high quality named steel type (Sandvik 12C27), rather than the motley collection of hand-me-down carbon steel Sabatiers (from the days when the name meant something) and cheapo tat received as presents.

This particular knife is fairly short bladed (4"), pretty much a paring knife, and the blade is quite stiff. The curved handle means it naturally sits at a slight downward angle, and the dip in the handle next to the blade is where your index finger tends to rest, giving a better grip than a totally smooth handle. The handle design is probably going to be more important for a longer, heavier chef's knife.

The cutting edge is superb, far surpassing any of my previous knives including a Global knife which I keep properly edged with a 1000 grit whetstone and a diamond steel. I realise that it's hard to ever get a knife as sharp as it is when new, but after a month of daily use with a few quick strokes of the sharpening steel the Due Cigni is still significantly sharper than the Global knife.
